Chocolate Vegan Cupcakes Using Boxed Cake Mix

I recently needed to bake cupcakes for my son’s birthday that everyone could safely enjoy despite dairy, egg, soy, and flaxseed allergies. We had a very busy birthday weekend ahead, and I felt exhausted. I needed a shortcut recipe that was simple, fast, and safe for him and all of his friends. I decided to make a soda cake using a boxed cake mix topped with my go-to vegan cream cheese frosting recipe. These vegan cupcakes turned out so good that you’d never know they were vegan! These cupcakes are light and airy and the frosting is a decadent addition.

How To Make Vegan Cupcakes With A Boxed Cake Mix

  1. Check your boxed cake mix for milk and egg ingredients. We used Betty Crocker Devils Food cake mix. Preheat oven to 350. Fill a cupcake pan with cupcake liners or lightly grease two 9″ cake pans and set aside.
  2. Pour cake mix into a medium mixing bowl. Pour one (12 oz) can of Coca Cola over the cake mix. Mix by hand until incorporated.

3. Pour batter into cupcake pans or cake pans. Bake according to the box directions. Cupcakes / cake is done when a toothpick inserted into the center comes out clean.

4. When cupcakes are done allow them to cool completely (about an hour) before frosting. To make the frosting, add vegan butter, vegan cream cheese, confectioners sugar, and pure vanilla extract to the bowl of your stand mixer. We use Violife vegan cream cheese and Country Crock plant butter for soy and flax free options. Mix your frosting on low speed until fully incorporated and creamy. Frost your cupcakes once they’re fully cooled.

Little Cooks Corner

This recipe is so simple that it’s easy to let your little birthday boy or girl help make their own cupcakes or cake. Let them pour the cake mix and soda into the bowl and stir.
