Instant Pot Taco Joes – Easy Weeknight Recipe
These taco joes are a kid favorite in our house. Every time I make these our kiddo quickly cleans his plate. This kid friendly dinner recipe is even better because the Instant Pot makes it so fast and easy! If you need a weeknight meal that your kids will love, let your Instant Pot do the heavy lifting and try these taco joes this week!
How To Make Instant Pot Taco Joes
1. Set your Instant Pot to the sauté setting. Brown 3 lb of ground beef in your Instant Pot. Once the beef is browned, drain the grease.

2. Scoop refried beans over the ground beef in your Instant Pot. Sprinkle with taco seasoning. Do not stir.

3. Pour enchilada sauce, water, and salsa over ground beef and beans, in that order. Do not stir.

4. Pressure cook on high pressure for 5 minutes. Once your Instant Pot is done cooking, do not release the pressure. Allow for a 10 minute natural release before pressing the pressure release valve.
5. In a small bowl, whisk together corn starch and water. Pour into your taco joe mixture. Stir well. The corn starch mixture will thicken your taco joes.

6. Serve your taco joes on slider buns with candied jalapeños and cheddar cheese.
