How To Make Black Eyed Peas And Collard Greens In The Instant Pot

  1. Start by prepping your collard greens. You want to wash and remove the leaves from the stems of your collards. Discard the stems. The stems will add a bitter flavor to your dish. Y’all know we don’t want to start the New Year off with bitterness in our hearts, so y’all best get rid of those stems! Set your collard leaves aside for step 3.

2. Traditionally, people serve pork jowls with black-eyed peas and collard greens because they say the meat represents moving forward on the right foot into the New Year. First, add your sliced pork jowls to the Instant Pot, and then cook them on the sauté setting until they’re cooked through. Keep an eye on their color and texture — you’ll know the pork jowls are ready when they turn golden brown and crispy.

3. After the hog jowl is cooked through, slowly add handfuls of your collard green leaves (remember, no stems y’all!) to the Instant Pot until it is wilted. Continue adding handfuls of collards until they are all cooked down.

4. Stir your dried black eyed peas into the Instant Pot with your hog jowl and collard greens. Sprinkle with salt. Add 6 cups of water to your Instant Pot. Make sure all of your black eyed peas are submerged in water.

5. Pressure cook on high for 15 minutes. Once the Instant Pot is done cooking, allow a 20 minute natural release. A natural release means that once your Instant Pot goes off you don’t want to release the pressure valve until 20 minutes after its done cooking.

6. Serve your black eyed peas and collard greens in a bowl with a side of cornbread.

  • 1 tsp salt

Instructions

  1. Start by prepping your collard greens. You want to wash and remove the leaves from the stems of your collards. Discard the stems. The stems will add a bitter flavor to your dish. Set your collard leaves aside for step 3.
