These sourdough Easter peep pancakes are an adorable way to brighten up your breakfast table on Easter Sunday! Why Measure In Grams?
When I first started baking with sourdough, I was hesitant to buy a kitchen scale. It seemed like entirely too much work. One day I finally caved and gave it a try. What I found was that my baked goods came out much more consistently, which is always a perk, but my favorite part was fewer dishes! I love being able to put my bowl on the scale and pour my ingredients directly into it without having to worry about dirty measuring cups and spoons. If you’re on the fence about buying a kitchen scale (I recommend this one), I highly recommend giving it a try. I’ll never go back!
How To Make Sourdough Easter Peep Pancakes
- Mix together 230 grams of sourdough discard or active starter, 230 grams of almond milk (or milk of your choice), 1 egg, 25 grams of sugar, 130 grams of all purpose flour, 3 grams of salt, and 5 grams of baking soda in a large bowl. Mix well.
- Add in 45 grams of olive oil. Mix well.

3. Pour your sourdough pancake batter in even amounts into 3 or 4 separate bowls (depending on how many colors you’d like to make).
4. Add drops of food coloring into each bowl until desired hue. I used about 15 drops of food coloring per bowl for 3 bowls of pancake batter. You may need more or less depending on how much batter is in each bowl.
I normally use all natural food coloring with no artificial dyes, which results in the darker colored peeps you see in most of my images. If you aren’t opposed to artificial dyes, regular food coloring in neon really makes these peeps pop.

5. Spoon your pancake batter into your peeps silicone mold.

6. Bake at 350 degrees for 15 minutes.

7. Let cool before popping the pancakes out of the silicone mold.

8. Serve with maple syrup for dipping and Finnish egg butter.

Update On Food Coloring
After making these 2 years in a row I had a happy accident after buying a new kind of food coloring. I normally use an all natural food coloring that uses no artificial colors. This results in the darker, more muted Easter peeps. I wasn’t able to find any of my usual natural food coloring this year and opted for regular food coloring in neon colors. If you aren’t opposed to artificial dyes, I highly recommend using neon food coloring for this recipe. The Peep pancakes are much more vibrant and look just like the signature marshmallow Peeps.
