Orange Creamsicle Water Kefir

This orange creamsicle water kefir is the perfect summer probiotic beverage. This flavor combination is delicious, refreshing, and packed with good gut bacteria to keep your family healthy and hydrated. It’s seriously so good, y’all.

Feeding Your Water Kefir Grains

Before starting this recipe, you’ll need to feed your kefir grains 48 hour in advance. Find more information on water kefir here.

Start by filling a quart size mason jar with water. Make sure to leave room at the top of the jar for expansion. We use Berkey filtered water for our kefir grains. Remember, if you have chlorine in your tap water, chlorine will kill your grains.

Using a digital scale, add 50 grams of sugar to your water. If you’re using filtered water, you will also want to add a couple drops of trace minerals or 3 grams of molasses. This will add the minerals your kefir grains need to stay healthy. Stir in your sugar and trace minerals/molasses.

Next, add 40 grams of water kefir grains to your jar. Stir.

Cover your mason jar and let your jar sit on a countertop out of direct sunlight for 48 hours for primary fermentation. Do not put an airtight lid on your jar. It will explode. I use Bee’s Wrap to cover my water kefir jars.

After your water kefir has completed primary fermentation you can begin making your orange creamsicle kefir!

Soda Recipe

Add 7 grams of pure vanilla extract and one peeled mandarin orange to your flip top bottle.

Strain your cultured water from your primary fermentation into the flip top bottle using a mesh strainer.

Seal the bottle and place on your countertop out of direct sunlight for 24 hours for secondary fermentation. After 24 hours burp (open) your bottle. If you don’t get much of a “pop” when you open the bottle, leave for another 24 hours. The amount of time your bottle will need to sit in secondary fermentation will depend on several factors, such as the temperature of your home.

After 24-48 hours in secondary fermentation, place your orange creamsicle water kefir in the fridge to chill and slow down the fermentation. Drink within 10 days.

  • `1 mandarin orange, peeled

Instructions

  3. Add 40 grams of water kefir grains to your jar. Stir.

  3. Repeat steps 1-4 with your kefir grains to prepare for your next batch of soda.
  4. Seal the bottle and place on your countertop out of direct sunlight for 24 hours for secondary fermentation. After 24 hours burp (open) your bottle. If you don’t get much of a “pop” when you open the bottle, leave for another 24 hours. The amount of time your bottle will need to sit in secondary fermentation will depend on several factors, such as the temperature of your home.
  5. After 24-48 hours in secondary fermentation, place your orange creamsicle water kefir in the fridge to chill and slow down the fermentation. Drink within 10 days.

Notes

We use Berkey filtered water for our kefir grains. Remember, if you have chlorine in your tap water, chlorine will kill your grains.
