Easy Instant Pot Hoppin John – A Budget Recipe

Hoppin’ John is a traditional Southern food that is versatile and budget friendly. Serve this Hoppin’ John as a side dish with pork chops, fried chicken, or fried fish. In our house, however, we enjoy Hoppin’ John as a hearty cold-weather entrée with a side of cornbread. This recipe makes 12 servings, so you can feed a crowd, stretch your grocery budget by enjoying leftovers for a few days, or freeze portions for later. At just .75 cents per serving and adapted for the Instant Pot, this recipe is a delicious and easy way to feed your family on a tight budget.

How To Make Hoppin John In The Instant Pot

1. Dice 12 oz of bacon place in the Instant Pot. Turn the Instant Pot on to the sauté setting and cook until the bacon is cooked through.

2. Once bacon is browned, turn off the sauté function on the Instant Pot. Pour dried black eyed peas (no need to soak), 1 chopped bell pepper, 1 diced jalapeño pepper, 1/2 tsp salt, 1/4 tsp cayenne, 20 oz of fire roasted Rotel, and 3/4 cup uncooked rice into the Instant Pot. Stir well.

3. Pour 6 cups of water into the Instant Pot over the other ingredients. Do NOT stir. Make sure the water completely submerges the black-eyed peas and rice.

4. Put the lid on your Instant Pot. Pressure cook on high pressure for 15 minutes. Once the Instant Pot finishes cooking, let it naturally release pressure for 20 minutes. Do not press the pressure release valve right away. Wait 20 minutes after the Instant Pot goes off to hit the pressure release valve.

5. After releasing the pressure on the Instant Pot, remove the lid. Turn the sauté function on and sauté the Hoppin John in the Instant Pot for 15 minutes with the lid off, stirring occasionally, to thicken.

6. Serve Hoppin John with a side of corn bread.

Ingredients

  • 12 oz bacon
  • 12 oz dried black eyed peas
  • 1 bell pepper, chopped
  • 1 jalapeño pepper, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne
  • 20 oz Fire Roasted Rotel diced tomatoes
  • 3/4 cup uncooked rice
  • 6 cups water

Instructions

    1. Dice 12 oz of bacon place in the Instant Pot. Turn the Instant Pot on to the sauté setting and cook until the bacon is cooked through.

This means you should not hit the pressure release valve as soon as the Instant Pot is done cooking. Wait 20 minutes after the Instant Pot goes off to hit the pressure release valve.

    5. After releasing the pressure on the Instant Pot, remove the lid. Turn the sauté function on and sauté the Hoppin John in the Instant Pot for 15 minutes with the lid off, stirring occasionally, to thicken.

    6. Serve Hoppin John with a side of corn bread.

Notes

There is no need to soak the beans overnight or precook the rice with this recipe.
