Instant Pot Bacon and Corn Chowder
There’s something so cozy about a comforting bowl of corn chowder on a chilly evening. One evening, with a sick kiddo attached to my hip, I wanted something cozy and filling but didn’t have the time (or energy) to stand over the stove for an hour. So I raided the pantry, grabbed a few cans of corn, some potatoes, and, of course, bacon — and this creamy, comforting chowder came to life.
What I love most about this recipe is how simple it is. Everything cooks right in the Instant Pot, which means less mess and more time to just relax while dinner practically makes itself. The bacon gives it that smoky, savory flavor we all crave, while the sweet corn and tender potatoes make it hearty enough to stand on its own.
And here’s the best part — it’s budget-friendly! You can feed a family of four for around $1.40 per serving, and no one would ever guess it’s made mostly from pantry staples. So whether you’re whipping up a quick weeknight dinner or just need a little comfort in a bowl, this Instant Pot Bacon Corn Chowder will hit the spot every single time.
How To Make Instant Pot Bacon and Corn Chowder
