Granny Smith Apple Tuna Salad
When I was in college I loved going to a little local deli down the street from campus. I always ordered their tuna melt with little bites of Granny Smith apple mixed it. Since moving away after college I often daydreamed about those sandwiches. I finally decided it was time to recreate my favorite sandwich of all time. This tuna salad has bright notes of lemon and Granny Smith apples. This is the perfect light meal for a hot summer day when it’s too hot outside to fire up the stove or oven. This recipe is also budget friendly, at about $1.10 per serving.
