The subtle sweet and warm flavors of these traditional Finnish cardamom cookies are the epitome of holiday cheer for our family. These are the cookies my family leaves for Santa, packs into holiday goodie boxes for neighbors and friends, and enjoys with hot cocoa in front of the fireplace on Christmas Eve. I hope this recipe can become a new tradition for you family this holiday season as well.
How To Make Finnish Cardamom Cookies
- Preheat oven to 350. Grease and flour a cookie sheet. Set aside.
Don’t skip this step. The greased and floured cookie sheet keeps your cookies from spreading too thin while baking.
2. Mix 1 cup of flour, 1/4 teaspoon of baking soda, 2 teaspoons of ground cinnamon, and 2 teaspoons of cardamom in a large mixing bowl. Set aside.
3. In another bowl, beat 1 egg with a fork until frothy.
4. Beat 3/4 cup of sugar and 1/2 cup of melted butter with the egg. Mix well.
5. Add the wet ingredients to the dry ingredients and mix until the cookie dough is smooth.
6. Let the cookie dough sit for 2 minutes to thicken.
7. Drop cookie dough onto your prepared cookie sheet by the teaspoonful.
8. Bake at 350 for 10-12 minutes until the edges are slightly browned. Cookies should still be soft. Allow to cool before eating.
