This easy goulash recipe makes for a hearty, budget friendly, and quick weeknight dinner. Goulash is a great recipe to help stretch your ground beef further. My family is usually able to eat on the leftovers for a couple of days which keeps me from having to cook every day.
What is American Goulash?
American goulash is an easy stew made with ground beef, noodles, and vegetables in a tomato based sauce. It is a simple comfort food made from pantry staples that cooks up in about 30 minutes, making it perfect for weeknight meal planning.
Recipe for easy goulash
Start by making the sauce. Brown 1 lb of lean ground beef in the bottom of a stock pot with onions, red pepper flakes, garlic, salt, pepper, and chili powder. Do not drain the pan juices after browning. The pan juices will add flavor to your goulash.
Once your ground beef is browned, add in tomato soup, fire roasted diced tomatoes, mushrooms, and green beans to make your sauce. Simmer your goulash sauce on low for 20 minutes.
While your sauce simmers, start making your elbow macaroni according to the package instructions.
Once your pasta noodles are cooked and your sauce is done simmering, strain your noodles and add them to the stock pot with your goulash sauce. Stir well to combine.
Serve topped with sharp cheddar cheese and a slice of homemade beer bread. My family prefers Cabot Seriously Sharp Cheddar or Tillamook Extra Sharp White Cheddar.
